I am sharing are two Cauliflower Crust recipes, one crust that resembles your favorite “Chicago-Style” or deep-dish style crust: thick and fluffy, and another for all the thin crust pizza lovers. Both are incredible, grain-free, dairy-free, and absolutely mouthwatering.

You’ll never look at pizza crust the same again.

The idea of cauliflower pizza crust seems simple, but quickly gets complicated when you search for a gluten-free cauliflower crust, and even more complicated when you want it to be dairy-free as well; trust me, my friends, I am with you! I was tired of the search, scouring the grocery store for a cauliflower crust that is everything I need and adheres to my sensitivities.

I was also tired of only being able to go to the one or two pizza shops that offered “Vegan, gluten-free pizza crust”; it’s harder than finding a needle in a haystack! So, I took matters in my own hands, did some experimenting, and surprisingly, found it easy and fun to make Gluten-Free, Dairy-Free Cauliflower Crust at home.

I am sharing this easy recipe with you so that you do not have to undergo the same troubles I went through. Don’t fret, these recipes are VERY easy and I will walk you through step by step.

You’ll be so happy with the final result, especially after you add all your favorite toppings and find that you can pick the slice up and enjoy it, just as you would any ordinary pizza crust.

Trust me, after trying numerous cauliflower crust, this is a “thing” and it can completely ruin your pizza experience.

Gluten and Dairy-Free Cauliflower Crust – Neapolitan Style!

This recipe is completely grain-free and dairy-free. The end result is a flavorful, thin pizza crust.

What you’ll need to make dairy-free, Gluten-Free cauliflower Pizza crust

Preheat the oven to 450°. Grab a baking sheet and line it with parchment paper. If you have a pizza stone, even better! (line the pizza stone as well)

Take one head of cauliflower and do a rough chop to have medium-sized florets. Place the cauliflower florets into an S-bladed food processor, along with 2 cloves of garlic (this is optional). Pulse until it is a “rice” like consistency.

I always pulse my cauliflower 10-15 times and it comes out perfect.

The next step is crucial! Transfer the riced cauliflower into a large bowl. Microwave the cauliflower for 5 minutes. This helps seam the cauliflower and will later help in extracting the moisture. If you prefer, you can line a baking sheet with parchment paper and bake the cauliflower in the oven for about 10 minutes to steam.

Now, transfer the steamed rice cauliflower to a cheesecloth clean dish towel. I like to let the cauliflower rice sit in a bowl lined with a cheesecloth, lightly salt the cauliflower, and let the moisture begin to seep as I prepare the other ingredients (about 5 minutes). Then, take the cloth and squeeze as much moisture out of the cauliflower as possible. You should squeeze out at least 2/3 cups. Drain as much liquid as possible;

Next, grab a clean, dry large bowl and add the cauliflower, gluten-free flour, baking powder, eggs, Italian seasoning, salt, and pepper. Mix the ingredients using a spatula. Form a ball with the dough and place it on the parchment-lined baking dish.

After the crust has baked for 15 minutes, remove it from the oven. Once your toppings are prepared and cooked, top your Cauliflower Pizza Crust generously. Tips:

You can top your pizza with 1-2 tablespoons of Nutritional Yeast if you want to enjoy a nutty, cheese flavor without actually using cheese. This is my favorite brand. Or, you can use Vegan Cheese! I newly discovered this brand. I love how great it tastes and it melts like real cheese.

If you want to skip the food processor, you can buy Riced Cauliflower that has already been ground to the consistency you need. Here’s one of my go-to cauliflower rice packages.

Try Soy Chorizo to keep this recipe Vegetarian/Vegan. Its a tasty meat alternative that taste like spicy, flavorful, ground meat. You can find it at Trader Joes in the produce section.

Chicago Style Pizza Crust -Thick Crust

  • 2 cups Riced Cauliflower

  • 1 cup Almond Meal
  • 2 tbsp Coconut Flour
  • 2 Large eggs, lightly beaten
  • 1 tbsp Italian Seasoning
  • 1/2 tsp Sea Salt
  • 1/4 tsp Freshly Ground Black Pepper
  • Toppings of Choice

  • Preheat oven to 350°F and cover a pizza stone or small baking sheet with parchment paper.

  • Place riced cauliflower and garlic cloves in a food processor. Pulse until crumbly, but not paste-like. Pour into a large mixing bowl.

  • Add almond meal, coconut flour, eggs, salt, and pepper to cauliflower mixture and stir to combine. The mixture should be sticky but hold together. If too dry, add water 1 teaspoon at a time. If too wet, add 1 tsp coconut flour at a time

  • Gently spread pizza dough into a circle using a rubber spatula and your hands. It should be about 1/2 inch thick.

  • Place dough in oven and bake for 15 minutes, or until starting to brown around the edges

  • While crust bakes, prepare toppings of choice.

  • Remove crust from the oven and top with desired toppings.

  • Return to oven, and cook another 10 minutes, or until bottom of crust is brown and toppings are hot

  • Enjoy!
